Welcome to Sweet and Savory Saturday here at the Health and Food Forum’s Blog. If you are looking for a tangy side dish to compliment a savory entree, I have just the one for you. Diced tomato, cucumber, and avocado join a lime-dijon mustard dressing to provide your palate with enough zing that it will be sure to please you. Containing antioxidants and healthy fats, this side dish is a nutritious addition to any meal.
1 1/2 cups diced tomato
1 cup diced cucumber
1 cup diced avocado
1/4 cup pine nuts
lime-dijon mustard dressing (see below)*
1/8 tsp salt
freshly ground pepper to taste
*Lime-Dijon Mustard Dressing: In a small bowl, combine 1/4 reduced-fat mayonnaise; 2 TBS dijon mustard; 1 1/2 TBS lime juic; and 1/8 tsp salt.
Place diced tomato, cucumber, and avocado in a medium size bowl. Sprinkle with salt. Gently toss. Add pine nuts. Spoon salad onto individual salad plates. Drizzle with lime-dijon mustard dressing and garnish with freshly ground pepper. Yield: approximately two servings.
